品種や精製プロセスの透明性はもちろん、市場に出される前に、味覚の資格を持ったコーヒー鑑定士がテイスティングし、味の良さに高い評価をつけてはじめて「スペシャルティコーヒー」というグレードとして認められます。数々の厳しい条件をクリアしたスペシャルティコーヒーの生産量は、世界のコーヒー生産量のわずか1%ほど。生産者のこだわりも生豆の品質も、トップオブトップなのです。
The green beans we select are known as specialty coffee. Specialty coffee means being able to trace who was involved in its cultivation and production, and even who handled it during distribution. But that alone is not enough. Transparency in variety and processing methods is essential, and before the coffee is released to the market, it must be tasted by certified coffee graders.
Only coffees that receive high scores for flavor are officially recognized as “specialty coffee.” After passing all these strict conditions, specialty coffee accounts for just about 1% of the world’s total coffee production. Both the producers’ commitment and the quality of the beans are truly at the top of the top.
