[抽出のポイント]

オリガミドリッパーは湯の抜けが早く未抽出になりやすいので、挽き目を細かく設定そしてお湯の温度をあげることで、成分が抽出されやすくします。

しかし逆に雑味も出やすくなるので、抽出を全体的に前倒しにしていくイメージで、落ち切る前に引き上げることで雑味の少ないクリーンな味わいも表現できる様に調整します。

Brewing Tips

The ORIGAMI Dripper has a fast flow rate, which can easily lead to under-extraction. To prevent this, we recommend using a finer grind size. Raising the water temperature also helps extract more flavor from the coffee.

However, this can also make it easier for unwanted bitterness or harsh flavors to appear. To avoid this, imagine moving the overall extraction slightly earlier. By removing the dripper before all the water has fully drained through, you can adjust the brew to express a clean cup with fewer unpleasant flavors.

 

Step1

Fold the edge of the filter and set it on the dripper.
Place them on the server.

 

Step2

Rinse the filter with hot water.

  

Step3

Preheat the cup by filling it up with hot water.

  

Step4

Weight 15g of coffee beans and grind them in a medium-fine-fine setting.

 

 

Step5

Throw out the hot water from the server.
Put the coffee ground in the dripper and zero out the scale

 

Step6

(0’00-0’30) Pour 40g of hot water.
Pour in 40g of water and wait for 30 seconds to get blooming.

 

Step7

(0’30-1’00) Pour the hot water up to 100g.
Pour in 60g of water with a circular motion from centre to edge for 15 seconds. The water flow should be powerful to give a gentle agitation.


 

Step8

(1’10-1’30) Pour the hot water up to 160g.
Wait 10 seconds, then repeat the same thing.
Pour 65g in for 15 seconds.


 

Step9

(1’40-2’10) Pour the hot water up to 240g.
Stay 10 seconds, pour in 80g let it take 30 seconds.
Make sure to pour on the edge of the paper as well.

 

Step10

(-2’30) When the timer reaches 2 minutes and 30 seconds, remove the dripper, even if the coffee has not fully drained into the server.


 

Step11
If you get the correct extraction, there are no coffee grinds on the edge of the filter. They should look flat at the bottom of the filter.



  

Step12

In the end, serve the coffee into the preheated cup.
