In 2024, among this year's washed coffees, this particular bean happens to be my personal favorite.
It's like stuffing your cheeks with apricots and rolling them around on your tongue forever, enjoying the various flavors while always marveling at the beauty of the liquid. I love Honduran coffee, I love the Parainema varietal, and I love the washed process. This coffee encapsulates all of my favorites.
We've handled beans from the Genesis farm before, and the honey-processed beans we had in the past were also exceptional. Like an explosion of honey lemon candy.
This year's washed process is really great as well. The roasting is done in a way that it simply accompanies, gently and slowly, without doing anything unnecessary, just properly setting the stage to maximize the potential of the beans.
