There are two things I'd like to share about these beans.
Firstly, the Maracaturra variety. It's notably large, a hybrid between Maragogype and Caturra, inheriting the size of Maragogype. In the world of coffee beans, bigger is often better because larger beans typically indicate a higher potential for good flavor. Simply put, the components that form the flavors are more abundant in larger beans.
In roasting, larger beans stand out as they develop sweetness and flavor more distinctly when properly developed. They also become juicier. While Loring Smart Roaster is great for bringing out flavors, it can struggle with producing juiciness and body; however, larger beans like Maracaturra allow for extended development time, enabling a broader range of expressions. I believe Maracaturra has a strong genetic tendency towards Maragogype, which means it often produces large beans, making it one of my favorite varieties.
Secondly, the terroir. Nicaraguan beans are from a country where the unique flavors derived from terroir are quite pronounced. There is a subtle, melon-like nuance common to the aftertaste of beans from this region. However, this particular bean does not exhibit much of this melon-like quality; instead, it has a gentle sweetness and a long-lasting clean cup.
The honey process and the inherent flavors from the Maracaturra variety have beautifully matched, resulting in exceptionally good quality.
