【Kissa】COSTA RICA La Candelilla Geisha Natural

カンデリージャはいくつかの小規模生産者が共同で立ち上げ
2000年にスタートしたマイクロミルで、
コスタリカでのスペシャルティコーヒーの先駆け的な存在です。
ゲイシャ種でしか味わえない華やかな香りと
繊細な甘さを持った上品な豆です。

Candelilla is a micro-mill started in 2000
as a joint venture of several small producers,
and is a pioneer of specialty coffee in Costa Rica.
It is an elegant bean with a gorgeous aroma and delicate sweetness
that can only be experienced with the Geisha variety.

 

生産者のエレアナさんが、オリーブオイルの製造過程から
ヒントを得て生み出したロット。
コーヒーの固定観念である、
「完熟した真っ赤なチェリーほど良い」
と言う常識にとらわれず、
完熟する手前のオレンジ色のチェリーを含ませることで、
より複雑性が増し、酸味と甘さのバランスの良い、
素晴らしいコーヒーが出来上がりました。
These coffee beans were crafted by producer Heleanna,
who drew inspiration from the olive oil production process.
Instead of adhering to the common belief that fully ripe,
bright red cherries yield the best coffee,
this approach includes slightly underripe orange cherries.
This method enhances the complexity of the coffee,
resulting in a fantastic balance of acidity and sweetness.
