「ドミニカないの?」とお店に来店するお客様が今でも多い、LiLo Coffee Roastersを代表するコーヒーの一つです。

The Dominican Republic, located on the eastern part of Hispaniola Island in the Caribbean, introduced coffee in the 18th century. LiLo Coffee Roasters has offered the Dominican Winy Natural since its founding in 2014. This coffee is cherished for its distinctive strawberry-like sweetness and tartness, making it a favorite introduction to specialty coffee for many. It remains one of LiLo Coffee Roasters' signature offerings, frequently requested by customers asking, "Do you have the Dominican?"



◉ 人情に厚くコーヒーに熱い



Alfred Diaz is a passionate coffee lover whose enthusiasm for the topic is endless. He not only cultivates various coffee varieties on his farm but also plants them in his home garden to show to visitors. Alfred's backstory is quite unique; he comes from a large family of 42 siblings. After his father's early death, he moved to New York at 19 to support his family, working in restaurants and warehouses, and eventually owning a supermarket. In 1991, he sold his supermarket and returned to the Dominican Republic. In 1989, he had already purchased a farm in Jarabacoa, captivated by the allure of coffee cultivation. He developed unique coffee processes like "Winy" and named his coffee "Princesa." Alfred is known for his compassionate treatment of his Haitian workers, often assisting them with medical needs. His family shares his deep affection for the farm and coffee.



Pico Duarte Farm is notably distinguished by its altitude, which is exceptional within the Dominican Republic. While typical coffee cultivation in the country occurs at elevations between 800 and 1500 meters, Pico Duarte Farm is situated at an unparalleled altitude of 1775 meters. This elevation is comparable to the growing environments found at 2500 meters in Costa Rica, a leading coffee-producing nation in Central America.



◉ 進化していく品種



The Lempira variety is a hybrid from the Catimor family, specifically selected by IHCAFE (Honduran Coffee Institute) in Honduras. Within the Catimor group, the seeds selected for the Lempira variety are distinguished for their unique characteristics.

Pico Duarte Farm cultivates a diverse array of coffee varieties, including the Lempira variety, which is a Catimor hybrid selected by IHCAFE (Instituto Hondureño del Café) in Honduras and specifically referred to as Lempira. In addition to Lempira, the farm grows Typica, Caturra, CR95, Parainema, Geisha, Catuai, SL28, Pacamara, Castillo, and ANACAFE14 among others. The farm continuously experiments with these varieties, testing different processing methods to achieve the ideal flavor profile they envision.
